Prep Recipe: Chocolate-Coconut Protein Pancakes with Berries

(12-14 small pancakes)

  • 3/4 cup spelt flour
  • 1/4 cup chocolate flavor protein powder1 tsp baking powder
  • 1/2 tsp baking soda2 squares of shredded raw chocolate1 cup coconut milk
  • 1 tbsp white vinegar
  • 1 tbsp melted coconut or vegetable oil
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Cooking Instructions:

Mix together flour, protein powder, baking powder, baking soda and shredded raw chocolate. In a separate bowl, whisk together vanilla extract, coconut milk, vinegar, melted coconut oil, vanilla extract and maple syrup. Whisk in the liquid mixture and stir until just combined, don't overmix. Let set a few minutes and bake on a low heat in a little amount of coconut oil.
